Slow Cooker Chili Recipe

This recipe will take about 15 minutes to prepare and will need to sit in your crockpot for around 6 hours and 10 minutes. Once the chili is cooked, it will serve around 6 people!

 

Ingredients Needed:

1 tbsp olive oil

2 lbs lean ground beef

1 large yellow onion – finely chopped

3 cloves of garlic

2 (14.5) ounce cans of diced tomatoes with green chilies

3 (8) ounce cans of tomato sauce

½ cup of water or beef broth

2 tbsp chili powder

2 ½ tsp ground cumin

2 tsp paprika

2 tsp cocoa powder

1 tsp granulated sugar

½ tsp ground coriander

Salt and Pepper

1 (15) ounce can dark red kidney beans, drained & rinsed

1 (15) ounce can light red kidney beans, drained & rinsed

 

Instructions:

Step 1: Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the finely chopped yellow onion and sauté for 3 minutes. Then add garlic and sauté for around 30 seconds. Once cooked, pour the onions into your crockpot.

Step 2: Return the skillet to the medium-high heat and add beef. Cook the beef stirring occasionally until it has browned. Once cooked, drain most of the fat and pour the beef into your crockpot.

Step 3: Add the diced tomatoes, tomato sauce, ½ cup water/beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander to the crockpot. Add salt and pepper to taste.

Step 4: Stir the mixture and cover with the lid and cook on low heat for 5-6 hours.

Step 5: Stir in both kidney beans and allow it to heat for about 10 minutes.

Step 6: Serve chili with your desired toppings and enjoy!
